In June, we were lucky enough to host our first ever blog meet – #LincsBlogMeet. Not only that, but we were kindly offered the upstairs room at ASK Lincoln to use. Anna, the manager, was amazing as I emailed her back and forth to organise the event. On the day, Stuart the deputy manager, was great too. Not only that, but as a huge surprise to us all, ASK gave all the attendees a cookbook each.
The cookbook is fabulous! It’s a full-size, incredibly thick, proper cookbook – just like those of Gordon Ramsay or Jamie Oliver! Not just that, but its crammed full of ASK’s amazing dishes.
To test out its quality, I decided to cook everyone Spaghetti Carbonara! It’s one of my personal favourites and so I didn’t really need an excuse to make that my first dish to try.
The ingredients are all fairly simple, though I did substitute one of the cheeses. I also skipped out on the fresh parsley as the girls can be funny about “green” things in their food. Overall though, it was a very simple recipe. In basic terms, you put on some spaghetti and wait for it to cook. In a pan, fry off some pancetta (though I used cubed ham as it was healthier) and just turn it off once ready. In a large bowl, you place your egg yolks, the cheese and some salt and pepper.
Once the pasta is cooked, drain and add the spaghetti to the bowl. Stir in, along with a little of the hot water from cooking the spaghetti, add a little single cream at this point too. The heat from the pasta, cooks the egg and melts the cheese. It all melts in together. Finally, turn the pan on again and re-warm the pancetta before finally throwing it into the bowl and mixing it up.
It was amazing. So tasty! I’d made a little extra and put it to one side for Chris to take to work the next day. However he enjoyed it so much that he actually went back and had it as seconds. Lily ate all hers and Megan was so slow I ended up letting her off eating it after half. However the general consensus was definitely that it was amazing.
